L'histoire du vignoble de Rabastens, commencée à l'époque antique, traverse tout le Moyen Âge. C'est surtout dans la deuxième moitié du XIVe siècle que la documentation, registres notariaux et registres d'estimes (1374-1392), permet d'en préciser la localisation et l'état. Localisation sur la terrasse supérieure et sur la première ligne de coteaux de la valée du Tarn. État de prospérité relative, surprenant pour l'époque, mais que peuvent expliquer le marché toulousain et les exportations ininterrompues vers bordeaux et l'Angleterre.

The history of the Rabastens vineyard, which begins in Antiquity, traverses the whole Middle Ages. It is in particular during the second half of the 14th century that documents - notary and tax registers (1374-1392)- allow us to give precisions on their localization and their state. The vines were located on the upper terrace and on the first line of hills of the Tarn valley. Their state was one of relative prosperity, surprising for the time, but it can be explained by Toulouse's market and by uninterruped exortations towards Bordeaux and England.

Die Geschichte des Weinanbaus von Rabastens (Tarn) beginnt in der Antike und durchläuft das gesamte Mittelalte. Die Archivbestânde - Notariatsregister und Güterschätzungen (1374-1392) - erlauben vor allem für die zweite hâlfte des 14. Jahrhunderts einen genauen Einblick in die Lage der Weinfelder und den Zustand der dortigen Weinproduktion. Der Wein wurde auf dem Höhenzug sowie auf der ersten Stufe der Hänge des Tarn-Tales angebaut. Die Weinproduktion war, verglichen mit derjenigen anderer Weinanbaugebiete jener Zeit, erstaunlich gewinnbringend, was sich aus der Nähe des Marktes von Toulouse und der ununterbrochenen Ausfuhr nach Bordeaux und England erklären läBt.
